At this altitude cherries mature slowly, building the sweetness and aromatic intensity the area is known for. They are delivered to the Lalesa cooperative and processed as a black honey: pulped with all of the mucilage left intact, then dried slowly under shade to develop depth and body while holding onto clarity.\u003c\/p\u003e\n\u003cp dir=\"ltr\"\u003eExpressive and fruit-forward in the cup, with papaya, mango and cherry.
