The coffee is then rehydrated in fermentation tanks with selected yeasts and bacteria before returning to raised drying beds for a further 11 days of sun-drying. A two-month stabilisation period under controlled temperature conditions allows the coffee to rest before export, supporting quality preservation.\u003c\/p\u003e\n\u003cp\u003eThis coffee is produced through Veci, a collaborative project launched by Luis Marcelino, founder of Aroma Nativo. Building on four years of connecting Colombian coffee producers with roasters around the world, the project brings together producers with strong agronomic practices who lack the infrastructure or space to process their own coffee.
