Beyond coffee production, the family integrates beekeeping into its agricultural ecosystem, thus strengthening biodiversity and enhancing its land.\u003c\/p\u003e\n\u003cp\u003eSince its inception in 2022, Zarza Coffee has perfected every step of production, from selective picking to managing fermentation and oxidation. \u003c\/p\u003e\n\u003cp\u003eThis lot starts with selective hand picking of ripe cherries followed by a 24 hour controlled oxidation. The whole cherries are then placed in airtight tanks for 60 hours for anaerobic fermentation. A second fermentation then occurs in air tight bags for a further 60 hours. The cherries then undergo a carefully controlled thermal shock before being sun dried on raised marquesina beds for 12 to 15 days.
