This coffee is collected from about a hundred coffee farmers in the Yirgacheffe area of Gedeb, with farms of 1 to 2 hectares maximum.

Once they arrive at the Chelchele station, a manual sorting is carried out in order to select only the most perfect cherries, before being dried on African beds between 15 and 20 days, depending on the weather. The cherries are turned regularly to ensure even drying.

Coffee culture is an integral part of the life of these farmers, where coffee is not only a way to make a living, but also a tradition.
