Los Nogales farm located in the fertile lands of Pitalito Colombia, is managed and cared for by the Hernández family for three generations. Among the crops on the Los Nogales farm, a wide variety of coffee plantations stand out, among them: Geisha, Caturra, Colombia, Cenicafe, Yellow and Pink Bourbon, Tabi, Hava, Bourbon and Typica.
Led by Oscar Fernando Hernández, an industrial engineer and former naval non-commissioned officer, the focus is always on quality by providing the kind of attention care and love to the plants that are typically reserved for family members.
The family laboratory is led by Angie Hernández an industrial engineer, responsible for improving fermentation techniques.
This caturra lot has been hand picked at optimal ripeness and then subjected to deep cleaning with treated water. They then undergo thermal shock and then pulped. A fermentation process lasting 120 hours follows before the beans are sun dried for 15 days.
This is our standard recipe for pour over filter brews using a 2 cup brewer. For larger sized brewers, increase the ground and brewed coffee weights using the same brew ratio.
