The Uraga washing station receives cherries from farmers in the surrounding area. The station is located in Guji.
The agricultural methods of the region remain largely traditional. Farmers in Guji usually intercrop their coffee plants with other food crops.and most farms are organic by default. Farmers in Guji typically use very little, if any, fertilizers or pesticides. Most of the farm work is done manually by the immediate family.
To take advantage of the beautiful climate, the Uraga washing station offers training to help farmers produce better quality cherries.
This batch is treated by carbonic maceration, a treatment technique inspired by winemaking. Like anaerobic fermentation, carbonic maceration usually takes place in a closed environment rich in carbon dioxide.
Creating a carbon dioxide-rich environment changes the types of microbes that will survive and thrive during fermentation. Different microbial activities will alter the flavour profile and can produce extremely unique and delicious flavours.
This is our standard recipe for espresso brews. You may want to experiment with this recipe and tailor to your equipment and taste preference.

We are always on the lookout for the best coffees. We talk to each other. We share our ideas. We order. We roast. We infuse. We taste. We share our impressions. We re-roast... We've been doing this for almost ten years and this is just the beginning. There is no destination for this trip. The quest for the best coffee has become our profession and our way of life.
