Their philosophy is simple: respect the land, continually refine every stage of production, and allow each coffee to express the unique character of Huehuetenango.\u003c\/p\u003e\n\u003cp\u003eOnly fully ripe cherries are hand-picked before undergoing a carefully managed fermentation. The cherries first rest for 36 hours before pulping, after which the beans complete a further 48 hours of dry fermentation. Once the desired profile has been achieved, the coffee is thoroughly washed and meticulously sorted, ensuring only the highest-quality beans continue to drying. The parchment is spread in thin layers across drying patios and turned regularly throughout the day for approximately 15 days until the ideal moisture content is reached.
