A hydroelectric plant harnesses the flow of the surrounding rivers to generate renewable energy, powering both the wet and dry mills as well as providing electricity to the people living and working on the farm. Following selective hand harvesting, ripe cherries are carefully laid on raised beds or drying patios and regularly turned to promote even drying.
