At Finca Ayapirayoc, geisha trees are cultivated by Cristobal Laura Coarite, a second-generation producer, reflecting both heritage and dedication. Having inherited his land from his parents, he now grows caturra, bourbon and geisha.

Cristobal and his family hand-pick ripe red cherries and process them on the farm. Visually sorting them and then floating them to ensure the highest quality. The cherries are then pulped in a plastic barrel and fermented for 36 hours. After fermentation, Cristobal washes the parchment with clean water and dries it on covered raised beds. He rakes the parchment frequently to ensure even drying. Drying takes about 16 days.
