Orange, lemon and avocado trees also grow across the farm, contributing to a diverse landscape and helping maintain the natural balance of the surrounding environment.\u003c\/p\u003e\n\u003cp\u003eJosé grew up learning about coffee from his father, developing an intuitive understanding of quality that now informs every stage of production. During harvest, coffee is picked with the support of his family and a trained team before being processed at the farm's own micro wet mill.\u003c\/p\u003e\n\u003cp\u003eThis lot is processed as a natural, with ripe cherries dried whole around the seed. After careful hand-picking, the cherries are transferred to a solar dryer. Protected beneath a translucent roof, the coffee dries gradually in a carefully managed environment that uses natural airflow and crosswinds to regulate temperature.The cherries begin on the lower tier and are gradually moved upwards as they dry.
