Named after the Ciprés, Mexico’s national tree since 1921, this coffee celebrates the rich cultural heritage and enduring traditions of Chiapas. Revered since Aztec times, the Ciprés symbolises wisdom, resilience and the deep connection between land, water and community.

Sourced from indigenous coffee-growing communities in Tenejapa, in the highlands of Chiapas, this lot reflects the distinctive character of Mexican coffee. Here, generations of producers cultivate coffee across mountainous landscapes, where volcanic soils and traditional farming practices contribute to the region’s agricultural identity.

This lot brings together Caturra, Typica, Costa Rica and Marsellesa varieties where carefully harvested cherries are processed using the traditional washed method, with overnight fermentation followed by 12–18 days of sun-drying on patios. This approach preserves the coffee’s clarity while allowing its natural sweetness and regional character to shine.

In the cup, Ciprés is comforting and beautifully balanced. Notes of milk chocolate, hazelnut and brown sugar form a rich, sweet foundation, complemented by a gentle marmalade-like fruitiness and subtle brown spices.
