Rodrigo Sánchez is widely regarded as one of the pioneers of modern Colombian coffee processing. At Finca La Loma, a family-managed farm in Pitalito, Huila, he approaches post-harvest processing with the curiosity and precision of a scientist, combining traditional coffee production with microbiology and controlled fermentation.

By isolating, cultivating and introducing specific microorganisms, Rodrigo continues to explore new ways of developing flavour, transforming Finca La Loma into a hub for agricultural innovation and experimental processing.

Situated at 1,730 masl, the farm benefits from a distinctive microclimate and rich volcanic soils that provide an excellent foundation for producing high-quality coffee. Rodrigo's approach is not about masking the character of the coffee, but building on the quality already present in the cherry and using precision fermentation to create new layers of complexity.

This coffee undergoes a highly controlled inoculated washed process. Rodrigo begins by isolating and cultivating Lactobacillus and Saccharomyces cerevisiae, which are developed into a carefully prepared mother culture using selected local fruits. The culture is fermented for approximately 190 hours, with pH and Brix levels closely monitored throughout the process.

Freshly harvested Caturra cherries are then exposed to this prepared culture, allowing the selected microorganisms to guide fermentation and shape the coffee's flavour profile. Lactobacillus contributes a distinctive lactic character and creamy texture, while the controlled fermentation enhances aromatic complexity and sweetness.

The result in the cup is a rich, creamy and remarkably distinctive, almost coconut milk-like texture and flavour, lifted by the bright, tart floral character of hibiscus. Beneath the intensity of the processing sits the lively acidity and structure expected from a high-altitude Huila coffee.
