The Hacienda Sonora farm, located at the foot of the Poás volcano, runs on 100% renewable energy thanks to a hydroelectric generator. This supplies the pulpers and deparators on the farm, while providing free electricity to the workers and the inhabitants of the farm. Hacienda Sonora also ensures fair wages for all its employees, strengthening the local economy.

Discovered in the late 1990s, the villa sarchi variety is a natural mutation of a Bourbon varietal, known for its high productivity, sensory profile, and disease resistance.

This lot has undergone a natural process, giving it a lively and fruity side, but it is also a method for farms to reduce wastewater and better protect the environment. After manual and selective picking, the ripe cherries are left to dry either on the raised beds of the farm or on the terrace, where they are turned frequently to promote uniform drying. This method allows for the development of complex and unique aromas, while allowing for precise temperature and humidity control.
