Zarza Coffee is a third-generation family business from the Bruselas Mountains.

Guided by its heritage and a deep passion for quality, the Gasca family has developed a project based on innovation, traceability, sustainability and an unwavering commitment to excellence - Zarza. 

Since its inception in 2022, Zarza Coffee has perfected every step of production, from selective picking to managing fermentation and oxidation. They are widely recognised for producing ultra-aromatic coffees shaped by complex fermentation processes. Their coffees often deliver bold, expressive flavour profiles Tribute like to describe as “Marvel-style”,  vibrant, exuberant and unapologetically intense.

For Tribute coffee is at its most compelling when it reflects a subtle interplay between terroir, cultivar and the thoughtful decisions of the producer. The goal is not simply intensity, but beauty, elegance and clarity in the cup. During their visit to Zarza in November, they tasted several coffees from the fresh harvest that leaned heavily toward highly expressive ferment profiles but this geisha stood out for its elegance, delicate and remarkably refined cup that draws you in quietly, revealing layer upon layer with time and attention.

In today’s specialty coffee landscape, coffees like this can easily be overshadowed. Set beside heavily processed lots bursting with flavours reminiscent of energy drinks and confectionery, a coffee built on restraint and structure may initially seem understated. But linger with it for a moment and its sophistication becomes undeniable. It is a deeply satisfying coffee and a testament to the remarkable terroir and to Jonathan’s refined understanding of processing, allowing the character of the coffee itself to shine with precision and grace.
