Juan Puerta's coffee is produced at Finca La Sirena, near the city of Armenia in Colombia's celebrated Quindío region. A first-generation coffee producer, Juan entered the industry after studying food science at university, where he developed a deep appreciation for the role agriculture and gastronomy play in Colombia's culture and economy. Today, he applies that knowledge to producing distinctive coffees that combine scientific precision with a passion for innovation.

The process begins with the careful selection of ripe cherries, which are rested for 12 hours before being sorted and washed by flotation to remove defective fruit. After pulping, the coffee is placed into sealed, plastic-lined barrels with freshly sliced peaches and a glucose-water solution. This controlled fermentation lasts for 48 hours, allowing the coffee to absorb complex fruit characteristics while maintaining balance and clarity. The coffee is then dried slowly on sunlit patios for approximately 15 days.

The final cup reflects both the richness of its origin and Juan's innovative approach to processing: vibrant, expressive and carefully crafted from cherry to cup.
