The Mierisch family has been producing coffee for over 110 years, making them one of the oldest coffee farming families in Nicaragua. They are constantly innovating and improving the efficiency of their agricultural practices to achieve accurate batch traceability, and to produce rare and world-renowned coffee varieties. 

Los Placeres farm in the Fincas Mierisch group, is a Rainforest Alliance Certified farm, with a total area of about 270 hectares, with 28 hectares protected from deforestation and hunting. Coffee trees are tightly planted, while increasing the spacing between the rows to improve air circulation and sunlight.  No chemicals are added to plants located within 5 meters of a water source. The water used during wet treatment is recycled. 

Ethiosar is a hybrid varietal resulting from a cross between Sudan Rume and Sarchimore. The resulting offspring is then cross-bred with a Villa Sarchi to produce a varietal, resistant to coffee rust, that is highly productive and produces an exceptional aromatic profile.

This lot has undergone a process that consists of inducing a controlled over-fermentation of the cherries thanks to a relatively high ambient temperature. It starts with harvesting ripe cherries only, floating and then transporting them to the washing station. There, the cherries are spread out in a thick layer on a plastic sheeting. The coffee is kept covered on the terrace for 36 hours at an average room temperature of 38°C and are monitored constantly monitoring to ensure they do not ferment completely. After this controlled fermentation, the coffee is spread in a thin layer. It is dried in the sun on the terrace for 5 days under maximum sunlight, then for another 28 days on African beds until a humidity level of 12% is reached. Taking up to 33 days before being moved to a warehouse for a further 30 days of resting. The dried cherries are then shelled and left to rest for another 30 days.
