From Finca El Paseo in Buesaco, Nariño, Wild Castillo showcases the work of producer Huver Castillo, whose family has cultivated coffee for more than 20 years. A former mathematics teacher, Huver returned to coffee farming in 2015, working alongside his father to shift the family’s focus towards specialty coffee. Through careful cultivation and increasingly precise processing, he has developed a distinctive approach to expressing the character of Colombian coffee.

Grown at approximately 1,800 metres above sea level on the slopes overlooking the Buesaco valley, this lot features the Castillo variety, known for its resilience and suitability to Colombia’s growing conditions.

The anaerobic honey process brings together controlled fermentation and the retention of fruit mucilage during drying. This method encourages sweetness and complexity while allowing the coffee’s fruit character to take centre stage.

In the cup, expect blackberry, gooseberry and golden berry. A vibrant combination of dark berry richness, tangy fruit and bright, sweet acidity. Expressive and fruit-forward, Wild Castillo offers a distinctive take on Colombian Castillo, shaped by Huver’s commitment to quality and thoughtful processing.
