This exceptional Pink Bourbon lot showcases the precision and innovation that have made Aroma Nativo one of Colombia’s most exciting coffee projects.

Only perfectly ripe cherries are selected before undergoing a carefully managed anaerobic fermentation. After pulping, the coffee is fermented with its mucilage intact in barrels containing indigenous bacteria and selected yeast strains, enhancing complexity and building a distinctive aromatic profile. The coffee is then dried on raised beds for 29 days before entering a two-month stabilisation period under tightly controlled conditions. This patient approach helps preserve quality, improve shelf life, and ensure exceptional cup consistency.

Founded by Luis Marcelino, Aroma Nativo has built a reputation for connecting lesser-known Colombian producers with some of the world’s leading specialty roasters. In 2022, the project expanded through the Veci Project, a collaborative initiative that supports small producers who grow exceptional coffee but lack the infrastructure to process it themselves. By purchasing cherries at premium prices and providing access to advanced fermentation expertise and processing facilities in Pitalito, Huila, Aroma Nativo helps unlock the full potential of each producer’s harvest.

Traceability sits at the heart of the project. Every lot is kept separate, with no blending between farms or harvest weeks. The result is a collection of exclusive micro-lots and nano-lots that capture the unique character of each producer, harvest, and processing journey.
