For the past four years, Aroma Nativo has been building meaningful connections between Colombian coffee producers and roasters around the world.

Through the Veci Project, founder Luis Marcelino has taken this mission further by creating a collaborative model for producers with strong agronomic practices but limited access to the infrastructure or space needed to process specialty coffee on their own farms.

Aroma Nativo provides the knowledge, expertise and specialised processing facilities located in southern Huila and Quindío, enabling these producers to transform their exceptional cherries into distinctive, high-quality coffees.

For this exceptional lot, only the ripest Striped Bourbon cherries were hand-selected to ensure the highest quality and optimal flavour development. A rare traditional mutation of Bourbon, Striped Bourbon is distinguished by its red cherries marked with distinctive orange stripes. In the cup, the variety is known for its vibrant fruit character, floral elegance and remarkable complexity.

The carefully selected cherries undergo controlled anaerobic fermentation before being pulped. The mucilage-covered beans are then fermented in barrels with indigenous bacteria and selected yeast strains, enhancing the coffee's aromatic complexity while allowing the distinctive character of the variety to shine.

Following fermentation, the coffee is returned to raised African drying beds, where it dries slowly in the sun for 10 days. It then undergoes a two-month stabilisation period in a temperature-controlled environment, allowing the coffee to rest and develop while preserving its quality and improving its long-term stability.
