Carlos Pola is a committed producer from El Salvador, who dedicates his life to moving specialty coffee towards a more sustainable, responsible model, without ever compromising on quality.

Since 2012, he has transformed his farm, Las Brisas, into a real open-air laboratory. Thanks to his own compost, a drastic reduction in chemicals and trees that naturally enrich the soil, he has designed an innovative agricultural model that combines science, tradition and ecology.

The H2 variety developed on the farm is resistant to diseases. 

Carlos is actively involved with his community training workers in specialty coffee and helping other farmers adopt more sustainable agriculture. He has developed a traceability tool to track each batch from harvest to shipment.

This coffee has undergone a honey process, typical of El Salvador. True to his commitment to eco-friendly methods, Carlos uses only natural products and controlled fermentation processes to reduce the water consumption of Finca Las Brisas. The hand harvested coffee cherries are in the shade for 3 days, then pulped. The remaining mucilage is then dried on raised beds for 15 to 20 days.
