After hand picking the ripest cherries, this Pink Bourbon variety goes through an anaerobic fermentation stage in whole cherries, then pulped and again a fermentation stage in barrels sealed with native bacteria and special yeasts. Then in a 12-day parabolic solar dryer and stabilized for 2.5 months in a temperature-controlled room.
For the past four years, Aroma Nativo has been building relationships between Colombian coffee producers and roasters from all over the world.
This year, Luis Marcelino, founder of Aroma nativo, goes even further by launching the Veci project, a collaborative coffee production between producers who have good agronomic practices but who lack infrastructure, space on the farm to process their coffee.
Aroma Nativo brings the knowledge and processing facilities located in the south of Huila and the county of Quindio.
