Finca Gascon - Guatemala

Finca Gascon, managed by Felipe Contreras, is an exceptional farm located between 1,700 and 2,000 masl, in the heart of the Antigua region of Guatemala. This 17 hectare farm benefits from an ideal microclimate and rich soils that produce a specialty coffee with a unique profile. Felipe has adopted an agroforestry model, integrating his coffee trees into the local forest to improve their health and the quality. In 2023, the farm switched to fully organic production, grown without chemical inputs thanks to the use of natural compost made on site.

The production of Finca Gascon coffee is based on a unique method combining tradition and innovation. Each cherry is harvested by hand during the day, then transported to the drying station where it is sorted and weighed. After a 12-hour fermentation overnight in an oxygen-deprived tank filled with water and lactic acid bacteria, the cherries are then dried according to the natural process. This complex and carefully controlled process ensures refined aromas and a balanced flavour.
