The Los Nogales farm is the result of coffee know-how passed down from generation to generation. Located in the Huila region, the coffee plantations benefit from an exceptional geography with mountains and fertile soils.
It was in 2005, after their 1st place in the "Cup of Excellence" competition in Colombia, that the Hernandez family, led by Ricaurte Hernández, Oscar Hernández's father, became known as a pioneer in specialty coffee.
Oscar Hernandez's farm has become a research and innovation centre with a desire torevolutionize the world of coffeewhile protecting the environment.
This wush wush variety has benefited from an innovative washed thermal shock process. Only ripe cherries are carefully picked by hand, and then cleaned to remove microorganisms and impurities. The chosen cherries then undergo a thermal shock by being immersed at 80°C for 20 seconds, then in cold water for 3 to 4 minutes. The cherries are then pulped and the mucilage is kept fora fermentation of 120 hours.
This innovative work results in anincredibly aromatic and surprising coffee.
In Portuguese, "MUDA" means young coffee shoot. The word also refers to the verb "Mudar" which means to change.
