The producers of the Rushashi cooperative are part of a colony, Rutabo, who set up an innovative process to enhance the notes of the terroir of this coffee. Growers grow other fruits and vegetables to make more income, but that's also what gives this place interesting notes to the coffee. Each producer owns about 300 coffee plants, and it is for this reason that they work in cooperatives and have obtained organic certification. Coffee certified organic by Certipaq FR-BIO-09,
Freshly picked cherries are first dry pulped, in order to remove the skin, but to keep all the "honey" present around the grains. Intensive sorting of the beans is then carried out on the pre-drying tables. This sorting removes any impurities that may exist. The next day, the drying stage begins: the coffee is placed on the tables where it will spend about three weeks until it reaches about 11% humidity.
