Daanisa, Filter - Ethiopia

The Daanisa Farmers' Group is a group of 44 farmers who deliver their cherries to the Dambi Uddo washing station. The farmers who contributed to this lot were hand-selected by Dambi Uddo due to the superior quality of their coffee. Their cherries are processed separately to maintain traceability. Farmers selectively pick the cherries by hand and deliver them to the local washing station or collection points.

The selectively hand-picked cherries are delivered to the washing station, sorted, floated in water to remove underweight or damaged beans and debris. After cleaning, the cherries are transported directly to raised beds, where they are spread out in a single layer for drying. The cherries are regularly raked and visually sorted by hand to remove damaged cherries that may have passed the initial sorting. Total drying time can take between 2-3 weeks.
