Two farms, 500 metres apart. Completely different cup.
Wine drinkers have known about terroir for centuries, the idea that soil, altitude, climate and shade leave a fingerprint on the fruit that no winemaker can fake or replicate elsewhere. Coffee works exactly the same way, even though the industry has been slower to say so out loud, and slower still to price it accordingly.
Altitude alone can shift a coffee from soft and sweet to bright and structured. Higher-grown cherries mature more slowly in the thinner air, developing more complex sugars before ripening, which is part of why so many exceptional coffees come from farms sitting well above 1,500 metres. Volcanic soil, common across much of Central America and parts of Indonesia, adds a mineral quality you can taste in the finish. Shade-grown trees, planted under a forest canopy rather than in open sun, ripen slower still, building sweetness the plant simply doesn't have time to produce when it's rushed.
None of this is marketing language. It's agriculture. The same way a Burgundy from one hillside tastes different to a Burgundy from the next, a washed Ethiopian from a 1,900 masl plot will taste different to one from a neighbouring 1,600 masl plot, same variety, same processing, same country, genuinely different coffee.
It's why coffee isn't just listed as Colombia on a bag. The farm, the region, the altitude, sometimes the specific lot make the difference between a coffee that's merely good, and one that tastes like somewhere specific. It's also the only honest way to let a roaster's sourcing decisions actually mean something to the person drinking the coffee.
Next time you brew a bag, look at where it grew before you look at how it was roasted. Altitude, soil and shade are doing most of the work before the coffee ever reaches a roaster, the roast just reveals what was already there, or hides it.
