Jermy Pedraza is an engineer and agronomist by training, and a third-generation coffee producer by heritage. At Finca La Joya in Chachagüí, Nariño, he combines scientific knowledge with generations of farming experience, treating his four-hectare farm as a place for experimentation, precision and continuous improvement.

Nariño is one of Colombia's most distinctive coffee-growing regions. Its proximity to the equator, combined with the dramatic elevations of the Andes, creates a unique growing environment of warm days and cool nights. These conditions slow cherry maturation, allowing sugars and flavour compounds to develop gradually and contributing to the complexity and sweetness for which the region is renowned.

This lot is a blend of Caturra, Castillo and Colombia, varieties well suited to Nariño's volcanic soils and high-altitude conditions. Under Jermy's careful management, they come together to create a coffee with depth, structure and vibrant fruit character.

The cherries undergo a carefully controlled five-day anaerobic fermentation in sealed bags, using a custom starter culture.  This approach allows for greater control over microbial activity while enhancing the coffee's tropical fruit profile. Following fermentation, the cherries are dried on raised beds for around 10 days, before finishing in a mechanical dryer to ensure even drying and long-term stability.

This is a technical masterpiece of the Natural process. Expect a heavy, syrupy mouthfeel with the precision of fruit notes. It is a balanced, intentional expression of Jermy’s agronomic expertise that is vibrant, tropical, and polished.
