Andy Llanos is a passionate producer from Peru, who plants several varieties of coffee and likes to experiment with fermentation, allowing him to offer several aromatic profiles. 

This year Cafe Muda have once again selected a tabi variety for espresso. Only ripe cherries are picked at harvest time, before the whole coffee cherries are fermented for nearly 18 hours before pulping. A second fermentation for 24 hours occurs at which time the coffee is washed and dried.
