The Nogales Group is a family-owned project spanning three farms, Los Nogales, Finca Nahui and Finca Neblina, dedicated to producing exceptional exotic coffee varieties through a blend of terroir, genetics and science. Inspired by innovative techniques observed in Panama, the team employs advanced drying systems with precise temperature and humidity control, alongside soil-focused fertilisation strategies using microorganisms and minerals to enhance both plant health and cup quality.

This experimental lot undergoes an incredibly meticulous process. Only perfectly ripe cherries are selectively harvested before being cleaned, disinfected and briefly pasteurised to intensify available sugars prior to fermentation. The coffee is then dry-pulped to retain maximum fruit mucilage before entering a 7-day fermentation using carefully preserved native yeasts and microorganisms recovered from previous fermentations of the same variety.

Extended fermentation, thermal shock processing and a custom yeast and bacteria starter culture all contribute to a cup that is intensely expressive, complex and beautifully refined.

Expect vibrant notes of banana, passionfruit (curuba) and butterscotch syrup in an elegant and deeply layered cup.
