Over the past decade, Pink Bourbon has become increasingly popular among producers in Huila for its ability to consistently deliver exceptional cup quality across washed, honey and natural processing methods. It has also adapted remarkably well to changing climatic conditions, showing strong resistance to pests and diseases such as leaf rust while maintaining reliable yields.

This lot has been processed using the sugarcane decaf method, where caffeine is gently removed using naturally derived sugarcane ethyl acetate. Completed in Colombia close to origin, the process preserves the coffee’s natural aromatics and flavour integrity, resulting in a decaf that still tastes unmistakably like coffee, sweet, balanced and full of character.

Sourced from smallholder producers across the fertile mountains of Huila and carefully selected by Caravela, this coffee expresses the region’s signature “Melao” profile — rich syrupy sweetness reminiscent of melted panela sugar, layered with complexity and softness in the cup.
