Jefferson Adrián Motta cultivates coffee at Motta Farm in Colombia's celebrated Huila region, where his Pink Bourbon grows at 1,700 masl under ideal mountain conditions. Representing a new generation of quality-focused producers, Jefferson combines meticulous farming with innovative processing to unlock the full potential of every harvest.

For this lot, only perfectly ripe cherries are selected before undergoing a Yellow Honey process enhanced by yeast inoculation and thermal shock. Carefully selected yeast cultures guide fermentation, building complexity and sweetness, while thermal shock precisely arrests microbial activity to preserve clarity and aromatic intensity. Retaining a layer of mucilage during drying adds a luxurious sweetness and silky texture to the final cup.

In the cup, vibrant watermelon and ripe mango deliver juicy sweetness and tropical freshness, while a delicate note of peppermint brings a cooling lift to the finish. The combination is bright, refined and beautifully balanced, with remarkable clarity and a lingering, refreshing complexity.
