Finca Guanacaste in EL Salvador, is more than just a coffee plantation: it is an agroforestry project, a commitment to regeneration and demonstrating that farming with trees is the way forward. In addition to coffee, Rodolfo Ruffatti plants cocoa, hibiscus and bamboo, to create a diverse and resilient ecosystem. Every year, new Hybrida plants are introduced to the plantation, ensuring that Finca Guanacaste continues to evolve, rooted in its heritage and looking to the future.

The typical El Salvadoran flavour profile is a marvel, largely underrated in today's market. It is becoming increasingly difficult to find a high-quality coffee, without astringency and with aromatic depth.

This lot comprises the old hybrid cultivars planted by Rodolfo's father. They are carefully harvested, then fermented and dried as whole fruits. The fermentation phase was beautifully managed, imparting rich fruity aromas in balance with the deep chocolate notes found in many hybrid cultivars in this region. Dried to a low humidity level of 9-10%, which is important for quality. Beyond the 13% moisture content required for export, additional drying reduces revenue (less weight to sell) and incurs significant additional costs in terms of time, space, and labour. Only the best producers, like Rodolfo, show the care and commitment necessary for slow and thorough drying.

Combine the delicate balance of whole fruit drying with careful drying and you have this coffee of unmissable Salvadoran excellence. In the cup, a beautiful harmony between fruity, cherry and berries, and chocolate aromas. The taste balance enhances these wonderful aromas. Best enjoyed as an espresso.
