Betania Farm is part of a network of 117 smallholder producers in southern Huila, one of Colombia's most celebrated coffee-growing regions. United by a shared commitment to quality and sustainability, these producers cultivate their farms using environmentally responsible practices, preserving traditional farming methods while avoiding chemicals that can harm soil health and biodiversity.

Together, they have built a collaborative model that benefits every member of the community. Shared facilities, including a cupping laboratory, professional drying stations and a central warehouse, enable each producer to improve quality while maintaining complete traceability from farm to export. 

At the heart of the network is Don Linarco, affectionately known as "Don Lino." A respected mentor and coffee producer, Don Lino combines generations of farming knowledge with a passion for continuous improvement. His work in refining selective harvesting, fermentation and drying techniques has elevated coffee quality across the region, while his commitment to mentoring younger producers ensures that knowledge and sustainable practices continue to be passed on.

Every coffee from Betania reflects this collective dedication, honouring tradition, embracing innovation and expressing the unique character of Huila's remarkable terroir.

Only perfectly ripe SL28 cherries are hand-picked before being carefully sorted and floated to remove any underripe or defective fruit. The selected cherries undergo a 48-hour anaerobic fermentation in sealed tanks, encouraging greater sweetness, fruit complexity and aromatic intensity while preserving the variety's natural clarity. The coffee is then slowly dried on raised African beds for 20–30 days, with the cherries turned regularly to ensure even drying and develop layered notes of honey, caramelised sweetness and dried fruit. Once the coffee reaches an ideal moisture content of 10–11%, it is rested in GrainPro bags for 12–20 days, allowing the flavours to stabilise before milling and export.

The result is a beautifully expressive natural coffee that showcases both the meticulous processing and the collaborative spirit of the Betania producers.
