Most high quality arabica coffee from China comes from the Yunnan region in southwestern China.  Rubber trees, pineapples and jackfruit trees serve as shade to the coffee trees. 

Xin Zhao produces coffees at the "Happenstance" estate, selected and used at the World Barista Championships. This is a perfect illustration of the potential of Chinese coffee on the international stage.

Ripe coffee cherries are sealed in a fermentation bag for 72 hours (28 degrees). Dried at 30% humidity, they are put back in the fermentation bag for another 120 hours and then dried in the sun.
