The Hurtado Gamba family has upheld the tradition of coffee cultivation for four generations, during which time the processes have evolved and improved.
Elio and Mercedes, the parents, were born and raised in Moniquirá and have worked in coffee since childhood, following a family tradition. Together, they have built a family with three children: Mayerly, the eldest, followed by Alejandra, and finally Ronaldo, the youngest. Ronaldo studied Biotechnology and has applied his knowledge to coffee, working in coffee labs and specialty shops in cities like Medellín and Bogotá. This experience has enabled him to return to the family farm and enhance their coffee processes, with a focus on standardisation, improving quality, and positively impacting the local community.
Only the ripest coffee cherries are hand picked for this lot. They are packed and sealed in bags for 10 days, where they undergo a fermentation to enhance the body and complexity of the final cup, before moving onto the drying stage. This takes place on the farm's rooftop drying beds, where the cherries are frequently turned until they reach 11% moisture, a process that takes approximately 12 days. After the drying, the coffee is stored in the farm’s warehouse, a specially constructed room where it is placed on pallets to stabilise.
