Located in the Bruselas Mountains, in Huila's renowned coffee-growing region, Zarza Coffee is a third-generation family business led by the Gasca family. Built on a heritage of coffee cultivation, the family's approach combines innovation, traceability and sustainable farming practices, with a strong commitment to quality and the long-term development of their land.

Established in 2022, Zarza Coffee brings together generations of experience with a considered approach to specialty coffee production. Beyond coffee, the family also integrates beekeeping into its agricultural ecosystem, supporting biodiversity and contributing to a more balanced farm environment. The name Zarza, connected to the Gasca family name, reflects their shared identity and commitment to preserving their coffee heritage.

Particular care is given to every stage of processing, beginning with selective cherry picking and continuing through a carefully managed fermentation. Whole cherries first undergo a short period of oxidation, encouraging indigenous yeast activity and laying the foundation for greater aromatic complexity. This is followed by prolonged natural fermentation in a closed or semi-closed environment, with temperature closely monitored to encourage controlled microbial activity and prevent over-fermentation.

Following fermentation, the cherries are slowly sun-dried on raised beds for 20 to 30 days, depending on climatic conditions. Regular turning and carefully managed sun exposure ensure even drying, while gradual moisture reduction helps concentrate natural sugars and preserve the complexity developed during fermentation. Once moisture levels reach 10–11%, the dried cherries rest for a further 10 to 20 days under controlled conditions, allowing the coffee to stabilise before milling.

The result is an expressive Colombian coffee shaped by generations of family knowledge and a thoughtful approach to processing, showcasing the aromatic complexity, sweetness and character developed through extended natural fermentation.
