Zarza Coffee is a third-generation family business, run by the Gasca family, nestled in the Bruselas Mountains. The name Zarza symbolises unity and an unwavering commitment to excellence. Beyond coffee production, the family integrates beekeeping into its agricultural ecosystem, thus strengthening biodiversity and enhancing its land.

Since its inception in 2022, Zarza Coffee has perfected every step of production, from selective picking to managing fermentation and oxidation. 

This lot starts with selective hand picking of ripe cherries followed by a 24 hour controlled oxidation. The whole cherries are then placed in airtight tanks for 60 hours for anaerobic fermentation. A second fermentation then occurs in air tight bags for a further 60 hours. The cherries then undergo a carefully controlled thermal shock before being sun dried on raised marquesina beds for 12 to 15 days. This slow and even dehydration process preserves the delicate aromas and gives the coffee a clean, sweet flavour profile.
