Zarza Coffee is a third-generation family business, run by the Gasca family, nestled in the Bruselas Mountains. The name Zarza symbolises unity and an unwavering commitment to excellence. Beyond coffee production, the family integrates beekeeping into its agricultural ecosystem, thus strengthening biodiversity and enhancing its land.

Since its inception in 2022, Zarza Coffee has perfected every step of production, from selective picking to managing fermentation and oxidation.

This batch of Geisha, from the Bella Vista farm, is made up of 30% green cherries and 70% fully ripe cherries. Jhonatan Gasca created this profile by chance during a harvest. He had to pick the whole harvest at once to prevent the heavy rains from destroying it.

In the cup you find the characteristic aromas of Geisha, with a beautiful floral presence and a pronounced sweetness, but the green beans bring a unique touch to the cup. The prolonged fermentation, followed by a thermal shock, reinforces these floral and herbaceous notes.

This lot starts with selective hand picking of cherries. The whole cherries are placed in airtight tanks for 72 hours. The beans are then pulped and preserved with their mucilage in fermentation tanks with a controlled atmosphere for 48 hours. The vats are again hermetically sealed to allow for a long enzymatic degradation of the pectins, which increases the softness, body and complexity for a further 48 hours at which point the cherries undergo a succession of rinses with hot and then cold water. The lot is then dried in the shade for 20 to 25 days.
