The La Chirascuasa farm, with an area of one hectare, was acquired by the Mora family eight years ago. They specialise in the cultivation of the Caturra and Catuai varieties.

Since planting, the Mora family has been carefully maintaining and renovating the farm. Concerned about the environment, they do not use herbicides and favour manual weeding, a more demanding but worthwhile task. They fertilise their crops three times a year and apply a leaf rust treatment two to three times a year.

This batch is produced anaerobically in leak-proof tanks for 48 to 60 hours, before being transferred to raised beds to dry for at least 25 days, giving it an intense, rich and complex cup.
