This coffee from Don Alexis Ramirez is juicy and sweet, with notes of ripe tropical fruit, raisins and a rich caramel aftertaste. It is complex, has a bright acidity, with a velvety body and a persistent sweetness.

Owned by the Ramirez-Navarro family, its founder and father of the family Mr. Alexis Ramirez was a farmer that dedicated his entire life to agriculture. Today the whole family is part of the farm, more than a dozen people in total.

Since 2015 they process their coffee themselves and work via direct trade, in order to focus on the quality and traceability of their micro-lots. 

The selectively picked ripe cherries are put in airtight barrels where they rest for 4 days. Once the anaerobic fermentation has ended, the cherries are partly depulped leaving some mucilage on the bean, allowing the remaining pulp to ferment and infuse the beans with unique flavours. Finally, the cherries are sun dried for approximately 22 days.
