The Uraga Washing Station sources cherries from hundreds of smallholder farmers throughout Guji, Ethiopia, where coffee farming remains deeply traditional. Most producers cultivate small family plots where coffee grows alongside food crops, a practice that supports biodiversity, improves soil health and provides food security. Farming is largely organic by default, with minimal use of synthetic fertilisers or pesticides, while nearly all cultivation and harvesting is carried out by hand.

To help farmers realise the full potential of their coffee, the Uraga Washing Station provides ongoing training in selective harvesting and post-harvest handling, ensuring only the highest quality cherries are delivered for processing.

Only fully ripe cherries are accepted before undergoing careful sorting and pulping. The coffee is then transferred to sealed fermentation tanks, where it is inoculated with ORO yeast, a culture developed specifically for coffee fermentation. Over 18–24 hours, the coffee ferments in an oxygen-free environment. This controlled anaerobic process encourages a unique microbial activity that enhances sweetness, aromatic intensity and fruit complexity while maintaining clarity and balance in the cup.  After fermentation, the coffee is thoroughly washed before being slowly dried on raised African beds for two to three weeks. During drying, the parchment is turned regularly to ensure even moisture reduction and preserve quality.

This coffee is a beautiful example of how Ethiopia's remarkable terroir and thoughtful innovation can work hand in hand. Expect a cup that is vibrant, expressive and distinctly Ethiopian, layering bright fruit, delicate florals and remarkable sweetness with exceptional clarity.
