Set at the foot of Costa Rica’s Poás Volcano, Hacienda Sonora is a remarkable farm where coffee production, biodiversity and renewable energy work in close balance.

The 100-hectare estate includes 45 hectares of shade-grown coffee, 35 hectares of preserved forest and 20 hectares of sugar cane, a crop cultivated on the property for more than 150 years. Coffee grows beneath a diverse canopy of native and exotic trees, supporting soil health and creating an environment for dense, flavourful cherries.

Sustainability is embedded throughout the estate. A hydroelectric plant harnesses the flow of the surrounding rivers to generate renewable energy, powering both the wet and dry mills as well as providing electricity to the people living and working on the farm. The estate also prioritises fair wages and local employment, ensuring that the benefits of coffee production extend into the surrounding community.

Hacienda Sonora has its own micro-mill, allowing the team to separate coffees by variety and produce distinctive micro-lots. The processing facilities sit alongside a traditional sugar cane mill that has been preserved on the estate for more than 150 years.

This lot is naturally processed. Following selective hand harvesting, ripe cherries are carefully laid on raised beds or drying patios and regularly turned to promote even drying. Hacienda Sonora focuses on honey and natural processing across its coffees, reducing wastewater while allowing the character of the cherries to develop during drying.
