In the western highlands of Kenya, Sidney Kibet is leading a quiet revolution. In Kericho, he explores a rigorous scientific approach to coffee processing, through small-batch experiments that challenge Kenyan coffee standards.

From anaerobic fermentation to natural processing, to SL28 precise separation, Sidney strives to rediscover the rich, complex flavour profiles that Kenyan coffee is world-famous for.

This lot has undergone a natural anaerobic fermentation for 96 hours in sealed 300-litre barrels, that are maintained at room temperature. Spontaneous fermentation, thanks to indigenous yeasts from the Kericho region, is added. Oxygen is limited throughout the process to promote a slow and expressive fermentation. The coffee is then dried on raised beds for 22 to 26 days.
