Los Nogales Farm is a family business, led by the charismatic Oscar Hernandez. Oscar is a third-generation farmer who grows coffee in the south of the county of Huila, near the town of Bruselas. 

Finca Los Nogales is based on three key pillars: terroir – the land gives us life and the coffee plants that grow there. Los Nogales concerns itself with long-term sustainability; genetics – traditional varieties of native Arabica like týpica, grow alongside newer and more resistant varieties such as Castillo or Colombia, exotic varieties imported from other countries and continents, such as gesha or Sudan Rume can all be found at Finca Los Nogales; and science and passion – innovation is key.

This lot has undergone a mosto fermentation that starts with the harvesting of only ripe coffee beans. The cherries are thoroughly cleaned and disinfected with treated water before being sorted by density. The selected grains are subjected to thermal shock in water at 80 °C for 60 seconds, followed by rapid cooling in cold water at 15 °C for 3 minutes. The coffee beans are then pulped from their skin and placed in fermentation barrels. To this, the juice obtained by pressing the skins of the coffee cherries, is added – the so-called "mosto". The coffee beans undergo a fermentation process that lasts 120 hours. During this time, the sugars are broken down. Pre-fermentation agents are also added, similar to the sourdough in bread, which can give coffee unique characteristics. Finally, the fermented coffee beans are dried in the sun for 15 days.
