Lisbeth Paredes Quispe is one of the youngest coffee farmers in Sandia, Puno province. She redefines tradition with her innovative approach to coffee farming. In a region where producers are often risk-averse, Lisbeth stands out for her commitment to improving processing methods, farm management and tree renewal. Her commitment to innovation and quality makes her one of the most outstanding producers in the region and in Valle Inca.

Lisbeth has been growing coffee since 2007. The farm, covered with dense vegetation, is very productive. Together with her family, she hand-picks ripe red cherries and processes them on the farm. She visually sorts the cherries, then floats them to ensure that only the best quality cherries are processed. She pulps the selected cherries, places the parchment in a plastic barrel and ferments it for 36 hours. After fermentation, Lisbeth washes the parchment with clean water and dries it on covered raised beds. She rakes the parchment frequently to ensure even drying. It takes about five days for it to dry.
