Located in Alaka, in Ethiopia’s Hambela Wamena district of Guji, this organic Q1 washed coffee comes from Metad, a family-founded company established by Aman Adinew in 2010. The farm covers approximately 141 hectares of semi-forest coffee, where coffee trees grow beneath native shade trees alongside crops such as enset, black pepper and avocado. This agroforestry system supports soil fertility and biodiversity, providing an environment well suited to Ethiopia’s native Arabica.

The cherries are carefully hand-picked and rested overnight before being pulped using an eco-friendly Penagos pulper, which removes most of the mucilage mechanically and reduces water consumption. The parchment is then soaked for 24 hours before being sun-dried on raised African beds for approximately 10–15 days. This combination of whole-cherry resting, gentle processing and careful drying may contribute to the coffee’s distinctive aromatic intensity while preserving clarity in the cup.

Grown at around 2,000 masl, the coffee benefits from cool conditions and a natural forest environment. Metad maintains rigorous quality control through mechanical sorting and final hand-sorting, ensuring consistency and traceability throughout the process.

Metad works closely with local farming communities, providing agricultural training, advance payments and coffee seedlings to support long-term livelihoods. Its wider social initiatives include investment in education, healthcare, clean water and opportunities for women. Through its partnership with Belco, Metad brings carefully traced Ethiopian forest coffees to European specialty markets, combining quality with environmental responsibility and community development.

In the cup, this coffee brings together the aromatic intensity and clarity we look for in a washed Ethiopian coffee. Notes of lime, lemon, apricot, mandarin and honey create a bright, fruit-driven profile, supported by crisp acidity and a refreshing, clean finish with little astringency. A vivid expression of Guji, delicate in its clarity yet remarkable in its intensity.
