Daanissa, a batch from 37 producers all from the village of the same name. This batch is made up of Gibirrina and Serto varieties, which are emblematic varieties of this region. The producers are all trained in agronomy and post-harvest practices by Ture Waji. The latter is also in charge of the nearby washing station.

This lot has undergone a natural process where the cherries are sorted and cleaned before being moved to raised beds for drying. The total drying time varies between 2 and 3 weeks. Humidity and grain drying controls are carried out daily to ensure long-term taste and quality.
