Nestor Lasso and his brother Adrian took over the family farm and branched out into specialty coffee and experimentation. Today, aged 22 and 24, the two brothers have joined forces with Jhoan Vergara, also the son of a coffee farmer, to createEl Diviso.This partnership allows these three young people to combine their knowledge to improve the quality of coffee.
This learning process took time and money, but with an exciting result because today their coffees have been used in many barista competitions across Europe, having recently won 1st place at theBrewers Cupin Ireland and 3rd place in Austria.
For this coffee, the Lasso brothers opted for anaturalprocesswith a fermentation in several stages.
The cherries are harvested when ripe and left in the open air for 12 hours. They are then placed into vats to begin their fermentation phase for 30 hours. They are bathed for 18 hours in water at 45°C before being left to dry for several weeks to obtain 11% humidity.
In Portuguese, "MUDA" means young coffee shoot. The word also refers to the verb "Mudar" which means to change.
