Dimtu Coffee Washing Station, operated by Nardos Coffee in Yirgacheffe, is one of Ethiopia’s most advanced dry processing facilities. Equipped with modern Pinhalense machinery, 150 drying beds and dedicated experimental spaces, the station reflects a relentless focus on quality and innovation.

Over three generations, Biniyam’s family has built a legacy deeply rooted in Ethiopian coffee, believing there are no shortcuts when it comes to producing exceptional coffees. Every stage of the natural process is carefully managed, beginning with rigorous cherry selection from surrounding smallholder farmers.

The coffee is dried slowly on raised beds for 22–25 days, developing a profile reminiscent of anaerobic processing without becoming overly fermented. Constant monitoring, regular turning and careful moisture management help preserve clarity, sweetness and complexity in the cup.

The result is a bright and expressive natural heirloom coffee with juicy notes of peach, orange confit and brown sugar, layered with delicate sweetness and refreshing fruit character.
