The Uraga washing station sources cherries from smallholder farmers across Guji. Farming in Guji remains deeply traditional. Coffee is commonly intercropped with food crops to maximise land use and support family livelihoods, while most farms are effectively organic by default, relying on minimal fertilisers or pesticides and predominantly manual labour.

To further elevate quality, the Uraga washing station provides ongoing training for local producers, focusing on selective harvesting and careful cherry handling to improve consistency and cup quality.

This particular lot undergoes carbonic maceration, a fermentation technique inspired by winemaking. While similar to anaerobic fermentation, carbonic maceration creates an environment rich in carbon dioxide that encourages different microbial activity during fermentation, resulting in highly expressive and distinctive flavour development.

The result is a vibrant and complex coffee with enhanced fruit character, layered sweetness and remarkable clarity in the cup.
